Guilt Free Chocolate Pudding | Edmonton Holistic Nutrition

Dairy Free & Loaded with Healthy Fats, Fibre & Flavour!

Here's one of my healthy go-to chocolate treats!

 

Great for...
-  a mid morning snack (paired with fruit & 1 Tbsp. chia seeds mixed in)
-  an evening desert instead of ice cream.  Throw a serving of this into the freezer for 30-60 mins for a frozen yogurt texture!   
-  a fudgesicle treat.  Place into a popsicle tray in your freezer for a warm mid-day treat!

Ingredients:

  • 2 ripe avocados, peeled & pitted
  • 1/2 cup cocoa powder
  • 1/4 to 1/3 cup honey/maple syrup or agave nectar (depending how sweet you want it)
  • 1/2 cup unsweetened nut milk (cashew, almond, oat, coconut etc..)
  • 1/2 tsp. vanilla extract

Directions:

  • Mash avocado with fork, then place in blender.
  • Add remaining ingredients to blender & blend.  I use "soups, syrups, fondue" setting on my Blendec.

** optional ** 1 scoop chocolate protein powder (consider reducing honey to 1/4 cup max since protein powders have sweeteners already).  I use Perfect Whey & Diesel Protein powder brands as they only contain stevia.  Sucralose can cause stomach upset and bloating so stevia sweetened powders are usually safe for me with Ulcerative Colitis.  

Avocado pudding lasts 5+ days in the fridge... which hasn't happened very often at my place! :)

Play around with flavours and textures too! Adding unsweetened coconut, chia seeds, hemp hearts, nuts, seeds and dipping fruit into pudding as if it was chocolate sauce makes this treat great for many occasions!
